Analyzing consumer demand for andean root and tuber products in Peru

Abstract

This article reports the results of a market level study that examines consumer demand, preferences and perceptions of two Andean root and tubers crops from Peru with natural functional properties. Market analysis was performed on value-added products derived from these tubers-pre-sliced and quality-guaranteed Ulluco, Purple Potato Papa Seca, and functional snacks made from both tubers. Descriptive and multivariate analyses, based on primary survey data, are performed and discussed in the paper.
