Determining oxygen and carbon dioxide dlffusivities of exocarp plus pericarp, pericarp, and stem scar of tomatoes

Abstract

The diffusivities of O2 and CO2 ofexocarp plus pericarp, pericarp, and stem scar of tomatoes were measured by the 'time lag' method. The O2 and CO2 diffusivities of stem scar of green stage tomatoes were 0.72 × 10-8 m2/s (7.75 × 10-8 ft2/s) and 0.30 × lO-8 m 2/s (3.2 × 10-8 ft2/s), respectively. They were 2- to 4.3-fold higher than those of exocarp plus pericarp and pericarp. All measurements were done at 21° C (70° F). The gas diffusivity values of all components studied increased during the ripening process.
