Abstract

The inhibition of Listeria monocytogenes in tofu by the use of a polyethylene (PE) film coated with a cellulosic solution containing nisin was studied. The nisin released from nisin-coated PE film in tofu was estimated and the level of nisin activity against the bacterial strains was obtained. It was found that the application of nisin film controlled the growth and survival of L. monocytogenes in tofu and decreased the chances of secondary contamination of opened packages.
